Abstract

Although distinctions have been made between the gustatory qualities by controlling the chemical make up of the stimulus, not enough attention has been given to the possible influence of other stimuli, for example visual stimuli. If such influences play a role, there should be some relation between the changes in color, and taste. This influence has been confirmed in the case of acidity and sweetness. Nevertheless, it should be pointed out that between gus­tatory perception and its verbalization intervene as participating variables other factors, such as social prejudice, which alter the subject’s judgment and influence his preferences.
